Passover is one of the first signs of spring. The holiday brings with it, the warmer weather, sunshine, and spring/summer fruits!
One of my favorite warm weather fruits is a cherry. The sweet juicy little stone fruits are something I look forward to all year and when they are finally available fresh, it is an exciting day at our house!
The good news is that this crumble uses frozen cherries, so no matter how early the Passover holiday falls I can have my cherries! And even better... I can have them topped with a brown sugar crumble and vanilla ice cream!
6 Cups frozen cherries
3/4 Cup granulated sugar
1/3 Cup potato starch
Zest and juice of 1 lemon
1 Teaspoon salt
3/4 Cup matzo meal
1/2 Cup brown sugar
1/2 Cup (1 stick) butter, cubed and very cold
2 Teaspoons cinnamon
Preheat the oven to 375 degrees Fahrenheit.
Pour the frozen cherries into a bowl. Stir in the potato starch, sugar, lemon juice, and zest. Pour into a 9x13 inch baking dish.
Pour the matzo meal, brown sugar, cinnamon, and cubed butter into a food processor. Pulse until the mixture resembles sand.
Sprinkle the matzo meal mixture liberally over the cherry mixture. Bake for 30 minutes and serve immediately.
