Cookie Dough Stuffed Sufganiyot

Hannukah is alllllll about the fried foods and while I am more than happy to eat the occasional doughnut, I am much more of a cookie and cake person.


There is nothing better than a hot, fresh out of the oven chocolate chip cookie... or so I thought. Then I concocted the idea in my brain to stuff a doughnut with cookie dough! To make sure that this holiday dessert phenomena wasn't too heavy, I cooked the doughnuts in our new air fryer, and then, of course, decorated them to look like cookie monster!

Doughnut Dough

½ Cup milk, warmed

2 ½ Teaspoons instant yeast

1 Egg

1 Egg yolk

¼ Cup sugar

½ Teaspoon kosher salt

2 Cups flour

7 Tablespoons butter at room temperature


Cookie Dough Filling

5 Tablespoons butter, room temperature

1/3 Cup brown sugar

1 Teaspoon vanilla extract

2/3 Cup all purpose flour

1 Tablespoon milk (or milk alternative)

1/2 Cup chocolate chips


Whisk egg, egg yolk, sugar, and salt in a large bowl until smooth and slightly pale in color. Whisk in warmed milk and yeast until combined.


Mix in the flour until almost fully mixed. Add butter (make sure it’s at room temperature!) and mix until incorporated. The dough should be smooth and slightly sticky.


Turn out the dough and knead for just a few minutes until very smooth. Transfer to a greased bowl and let rise for 1 ½ - 2 hours until doubled.


While the dough is proofing, make the cookie dough by creaming together the butter and brown sugar for 2 minutes. Mix in the rest of the ingredients.


Punch the dough down and divide into 8-10 even balls. Take one of the balls and roll into an oval. Place 1 tablespoon of the cookie dough in the center of the dough. Fold the dough over the cookie dough (see video below) and roll into a ball.



Place 4 doughnuts in an air fryer that has been preheated to 350 degrees Fahrenheit. Cook for 5 minutes, flip and cook for another 5 minutes.


Decorate any way that you like!
