Here’s another one of those “passover recipes usually suck” recipes. These brownies are so gooey and fudgy that you won’t even know they are gluten free, dairy free, and kosher for Passover!!
1 ¼ Cup almond flour
¾ Cup cocoa powder
Pinch of salt
¾ Cup coconut oil (melted)
1 Cup sugar
1 Tablespoon instant coffee
1 Teaspoon vanilla extract
½ Cup chocolate chips
Preheat the oven to 350
Whisk together the sugar, instant coffee, melted coconut oil, and salt. Whisk in the eggs one at a time.
Sift the almond flour and cocoa powder into the wet ingredients and mix until just combined. Stir in the chocolate chips and pour into a 9X9 inch square pan.
Sprinkle chocolate chips on top and bake for 30 minutes.
Let cool completely before cutting into squares.
