Oatmeal Apple Cookies

1/2 Cup butter, softened

3/4 Cup brown sugar

1/2 Cup granulated sugar

2 Large eggs

1/4 Cup honey

1 Teaspoon baking powder

1/2 Teaspoon baking soda

2 Cups all purpose flour

1 Cup rolled oats

1 Teaspoon ground cinnamon

1 Cup dried apple, roughly chopped

1/2 Cup freeze dried apples (optional)


In the bowl of a stand mixer cream together the butter, brown sugar, and granulated sugar until light and fluffy. This should take 3-5 minutes.


On low speed, mix in the eggs one at a time, until fully incorporated. Add in the honey. Scrape the sides of the bowl often.


Once the eggs are incorporated, slowly add in all of the dry ingredients (flour, baking powder, baking soda, oats, and cinnamon) while the mixer is on low speed. Once the dry ingredients are almost all incorporated, remove the bowl from the mixer and stir in the dried and freeze dried apples.


Place in the refrigerator for 2-24 hours.


Preheat the oven to 375 degrees Fahrenheit. Drop 1 tablespoon sized cookies onto a greased (or lined with parchment paper) cookie sheet.


Bake for 12-15 minutes, or until browned.
