I was on the phone with my grandmother the other day and while chatting, she mentioned that there was a shortage of graham crackers because so many people were making s’mores this summer! Of course, I immediately rushed to the grocery store and bought a box of graham crackers!
Now, in Southern California we cannot have the same kind of fire pits that we had growing up in the Midwest which means that we can’t really make s’mores… But, these cookies are the next best thing!!
1 Cup (2 sticks butter), room temperature
½ Cup white sugar
½ Cup powdered sugar
1 Teaspoon vanilla
2 eggs
½ Cup cocoa powder
1 Teaspoon baking powder
½ Teaspoon baking soda
2 ½ Cups all purpose flour
1 Cup crushed graham crackers
½ Cup semi sweet chocolate chips
1 Bag marshmallows
Preheat the oven to 375 degrees Fahrenheit.
Beat the butter, sugar, and powdered sugar together until light and fluffy. Beat in eggs.
Mix in the cocoa powder and vanilla extract. Gradually add in the flour, baking powder and baking soda with the mixer on medium speed.
Mix in the crushed graham crackers and chocolate chips.
Using an ice cream scoop, scoop out 18 balls of dough. Take one ball and flatten into a circle with your hands. Place a marshmallow in the center. Pinch the dough back together to form a ball. You can roll in your hand if needed.
Place 6 cookies on a sheet about 2 inches apart. Bake for 15 minutes. Complete for all cookies. Let cool completely before eating or the marshmallow will burn your mouth!
