This frosting is fantastic with chocolate cake, or vanilla cake, or really any cake! The strawberries add a fresh element that is not overwhelmingly sweet. I hope you enjoy!
1 Cup butter (2 sticks), room temperature
⅓ Cup strawberry puree
4-6 Cups powdered sugar
1 Teaspoon vanilla extract
To make the strawberry puree, cut the tops off of ½ pound of strawberries and place in a food processor. Process until the mixture is liquid. If you would like to keep the seeds, pour the puree directly into the bowl you will be making the frosting in.
If you want a smoother frosting with no seeds, use a cheesecloth to squeeze the puree into the bowl you will make the frosting in and trap the seeds in the cloth.
Add the butter to the bowl and beat until fluffy. Add in vanilla extract and mix. Beat in powdered sugar one cup at a time until the frosting is light pink and stiff.
Frost the cake and enjoy :)
